Vegan Pumpkin Spice Oatmeal Cookies
Pre-heat oven to 300 or dehydrate to 120
Combine oats, seeds, spices and fruits in a mixing bowl and set aside.  In a blender, incorporate remaining ingredients at medium speed until smooth and mix in dry ingredients.  Roll into 2 inch balls or flatten on a lightly oiled cooking sheet.  Bake 35 to 40 minutes.  Dehydrate 6-8 hours, turning once. Makes 2 dozen cookies. 

Ingredients

  • 4 cups organic oats
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup chopped almonds
  • 2 tbs cinnamon
  • 1  tsp allspice
  • 1 tsp Himalayan salt
  • 2 shredded apples
  • 1/2 cup soaked dates
  • 1 cup pumpkin seed milk
  • 1/2 coconut oil (liquified)
  • 1 cup peanut butter
  • 1 tbs vanilla extract
